Profilins are found in pollens from trees, grasses, weeds, fruits, vegetables, nuts, spices, and latex. IgE reactivity to profilins contributes significantly to IgE cross‑reactivity between trees, grasses, and weeds. Since profilins are also known to be heat and protease sensitive, profilin specific IgE is an important trigger for oral allergy syndrome: a mild, short lived, oral reaction, occurring immediately after the ingestion of raw fruits, vegetables, and nuts. This syndrome is more commonly seen in pollen allergic patients than in patients with true food allergies.
